New devices without in built sim, BT and data question

Looking at new devices - would prefer built in sim but there doesn't seem to be any new devices available. Use mostly for daily commute to get updates on traffic (the main feature i want/need).

question 1: New devices without built in sim how much actual mobile phone data do they use?
question 2: i listen to podcast via phone via BT connection in car, do the TT connection stop/interfere with other BT connections (sorry not tech savvy and not used non-sim device before)

    Normally the music stops for a moment to tell you about traffic or a speed camera.

    thank you very helpful. When the music stops to tell you about traffic/speed cam is this due to the verbal directions now coming through the bluetooth rather than the device?
