I don't have a Scala but with My Packtalk Bold, you have to turn up the volume via the headset.
My Unit also supports different volume settings for different functions (phone, music, GPS, etc) so you have to adjust the volume on the headset whilst the particular source is playing i.e. for me, I would need to turn up the volume on the headset whilst the GPS is making an announcement (you can preview a route to generate voice instructions if necessary).
Also FYI, on my Rider 550 there is a volume setting on the quick settings screen but this disappears when my headset is connected, presumably because when a headset is connected, it is the headset that controls the volume.5
