How do you use the watch when Spinning? About the closest I can see is the Freestyle

You really can't although some models make it easier than others. If you have a Spark or later you can use indoor cycling mode, which has the option of connecting a cadence/speed sensor to get speed & distance (although this may not be possible if it is not your bike). Otherwise you will just get duration, HR & calories on HR. If you have a Runner1 or MultiSport, this mode does not exist and there is not gym mode so you are out of luck. Freestyle is not going to work in any case as it requires GPS which you will not likely have indoors so it will not start.

I hope this helped answer your question. If so, please mark it as a solution so others can look for it if they have the same question.
